Description

This delicious pan-seared salmon is complemented by a zesty lemon and caper sauce, perfect for serving over pasta or alongside vegetables.


Ingredients

Scale
  • 4 salmon fillets (about 6 oz each)
  • 1/2 cup all-purpose flour
  • 2 tablespoons extra virgin olive oil
  • 2 fresh lemons (juiced and zested)
  • 3 tablespoons capers (rinsed)
  • 3 garlic cloves (minced)
  • 1 cup low-sodium chicken broth
  • 1/4 cup fresh parsley (chopped)

Instructions

  1. Pat the salmon fillets dry and season both sides with salt and pepper.
  2. Dredge each fillet lightly in flour, shaking off excess.
  3. Heat olive oil in a large skillet over medium-high heat. Sear the salmon skin-side down for about 4 minutes until golden brown.
  4. Carefully flip the salmon and add minced garlic and capers around it; sauté for about 1 minute until fragrant.
  5. Pour chicken broth and lemon juice into the skillet, scraping any bits from the bottom. Simmer for 2 minutes.
  6. Finish by adding lemon zest and chopped parsley before serving over pasta or alongside veggies.

  • For added flavor, use lemon zest in the sauce.
