Description

A hearty and comforting beef stew with cabbage and rice.


Ingredients

  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups green cabbage, shredded
  • 2 (14 oz) cans fire-roasted diced tomatoes
  • 4 cups low-sodium beef broth
  • 1 cup uncooked white rice
  • 2 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping the onion and mincing the garlic. Core and shred the cabbage.
  2. In a large pot over medium heat, drizzle olive oil and sauté onion and garlic until fragrant (about 3-5 minutes).
  3. Add the ground beef to the pot; cook until browned (5-7 minutes), breaking it up as you stir.
  4. Stir in diced tomatoes (with juice), beef broth, rice, shredded cabbage, oregano, thyme, salt, and pepper. Mix well.
  5. Bring to a boil; reduce heat to low and cover. Simmer for 30-40 minutes until the cabbage is tender.
  6. Taste and adjust seasoning if needed before serving with fresh parsley.

  • For extra flavor, consider adding fresh herbs or a splash of vinegar before serving.
