Ingredients

- 1 lb boneless, skinless chicken breasts, diced
- 1 cup unsalted cashews
- 2 bell peppers (mixed colors), sliced
- 1-inch piece fresh ginger, minced
- 3 garlic cloves, minced
- 3 green onions, chopped
- 3 tbsp low-sodium soy sauce
- 2 tbsp cornstarch
- 1/2 cup low-sodium chicken broth
- 2 tbsp vegetable oil
Instructions
- Prep your ingredients by dicing chicken and slicing bell peppers. Mince garlic and ginger.
- Marinate the chicken with soy sauce and cornstarch; stir until bubbling.
- Mix in cashews and garnish with green onions before serving hot.
