Ingredients

  • 1 lb boneless, skinless chicken breasts, diced
  • 1 cup unsalted cashews
  • 2 bell peppers (mixed colors), sliced
  • 1-inch piece fresh ginger, minced
  • 3 garlic cloves, minced
  • 3 green onions, chopped
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp cornstarch
  • 1/2 cup low-sodium chicken broth
  • 2 tbsp vegetable oil

Instructions

  1. Prep your ingredients by dicing chicken and slicing bell peppers. Mince garlic and ginger.
  2. Marinate the chicken with soy sauce and cornstarch; stir until bubbling.
