Description

This Caprese Chicken is a delicious and easy dish combining juicy chicken breasts topped with fresh mozzarella, cherry tomatoes, and basil, drizzled with balsamic glaze.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 8 oz fresh mozzarella cheese
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh basil leaves
  • 2 tbsp balsamic glaze
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by washing cherry tomatoes and basil leaves.
  2. Pat dry the chicken breasts and season generously with salt and pepper.
  3. In a large skillet, heat olive oil over medium-high heat. Sear chicken for about 5-7 minutes per side until golden brown.
  4. Once cooked, layer mozzarella slices on top of each breast followed by halved cherry tomatoes. Cover until cheese melts slightly.
  5. Remove from heat, sprinkle fresh basil on each piece, and drizzle with balsamic glaze.
  6. Serve warm alongside a light salad or crusty bread.
