Description
This delicious peanut butter banana bread is moist and packed with flavor. A perfect way to use ripe bananas!
Ingredients
Scale
- 1/2 cup unsalted butter, melted and slightly cooled
- 1/2 cup brown sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1/2 cup sour cream or plain Greek yogurt
- 3 ripe bananas, mashed
- 1 and 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup peanut butter (plus more for swirling)
- 1/2 cup chopped chocolate or chocolate chips
Instructions
- Preheat and prepare: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line it with parchment paper, leaving a little overhang on the sides so it’s easy to lift the bread out later.
- Whisk the wet ingredients: In a large mixing bowl, whisk together the melted butter and brown sugar until smooth. Add the eggs and vanilla extract, mixing until well combined. Stir in the sour cream and mashed bananas, and whisk until the mixture is creamy and slightly lumpy from the bananas.
- Fold in the dry ingredients: Stir in the flour, baking soda, and salt until just combined. Be careful not to overmix—this keeps the bread tender.
- Add the chocolate and peanut butter: Pour half of the batter into the prepared pan, then dollop half of the peanut butter over the top. Use a knife to gently swirl it through the batter. Repeat with the remaining batter and peanut butter on top, swirling again for a marbled effect.
- Bake: Bake for 55–65 minutes, or until a toothpick inserted into the center comes out mostly clean (a few melted chocolate streaks are fine!). If the top is browning too quickly, tent it loosely with foil halfway through baking.
- Cool and enjoy: Cool in the pan for about 10–15 minutes, then transfer it to a wire rack. Enjoy warm with a smear of extra peanut butter, or let it cool completely for cleaner slices.
Notes
- Let the bread cool completely before slicing for better consistency.
- This bread can be stored at room temperature for a few days or in the refrigerator for up to a week.
- For added flavor, you can include chopped nuts or use dark chocolate chips instead of regular chocolate.
