Description

Delicious and aromatic cookies featuring dried cranberries and a hint of orange.


Ingredients

  • 2 ¼ cups all-purpose flour
  • ½ teaspoon salt
  • 16 tablespoons unsalted butter, softened
  • ¾ cup granulated sugar
  • ½ cup confectioners’ sugar
  • 2 large egg yolks
  • 2 teaspoons vanilla extract
  • ½ cup chopped dried cranberries
  • 1 tablespoon finely grated orange zest

Instructions

  1. Whisk together flour and salt; set aside.
  2. Cream butter with granulated sugar, confectioners’ sugar, and orange zest until light and fluffy. Add egg yolks and vanilla; mix until combined.
  3. Gradually add dry ingredients, then fold in cranberries.
  4. Shape dough into two logs, wrap in plastic wrap, and chill for at least 2 hours.
  5. Preheat oven to 325°F (163°C). Slice logs into circles and place on a parchment-lined baking sheet; sprinkle with sugar if desired.
  6. Bake for 12-13 minutes until edges are set; cool on the baking sheet for three minutes before transferring to a rack.
