Ingredients

- 2 ¼ cups all-purpose flour
- ½ teaspoon salt
- 16 tablespoons unsalted butter, softened
- ¾ cup granulated sugar
- ½ cup confectioners’ sugar
- 2 large egg yolks
- 2 teaspoons vanilla extract
- ½ cup chopped dried cranberries
- 1 tablespoon finely grated orange zest
Instructions
- Whisk together flour and salt; set aside.
- Cream butter with granulated sugar, confectioners’ sugar, and orange zest until light and fluffy. Add egg yolks and vanilla; mix until combined.
- Gradually add dry ingredients, then fold in cranberries.
- Shape dough into two logs, wrap in plastic wrap, and chill for at least 2 hours.
- Preheat oven to 325°F (163°C). Slice logs into circles and place on a parchment-lined baking sheet; sprinkle with sugar if desired.
- Bake for 12-13 minutes until edges are set; cool on the baking sheet for three minutes before transferring to a rack.
Notes
- For best results, be sure to chill the dough before slicing.
- These cookies can be stored in an airtight container for up to a week.
