- 6 large eggs
- 1 cup cottage cheese
- 2 cups spinach (fresh or thawed frozen)
- 1 cup shredded mozzarella cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
Instructions
- Preheat your oven to 375°F and grease a baking dish.
- If using frozen spinach, thaw and squeeze out moisture. If using fresh, sauté until wilted.
- In a large bowl, whisk together eggs, cottage cheese, mozzarella, garlic powder, onion powder, salt, and pepper.
- Stir in the prepared spinach evenly.
- Pour the mixture into the baking dish.
- Bake for 35–40 minutes or until set in the center and golden around the edges.
- Let rest for 5 minutes before slicing and serving.

- This dish can be made ahead of time and reheated.
