Delicious gluten-free cinnamon sugar cookies that are soft and chewy.

- 1 ½ cups gluten-free all-purpose flour
- ½ cup unsalted butter, softened
- ½ cup granulated sugar
- ¼ cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- ½ teaspoon cream of tartar
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 2 teaspoons ground cinnamon
- 3 tablespoons granulated sugar (for coating)
Instructions
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy (2 to 3 minutes).
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the gluten-free flour, cream of tartar, baking soda, and salt.
- Slowly mix the dry ingredients into the wet mixture until a dough forms.
- Cover and chill the dough in the refrigerator for 30 minutes.
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a small bowl, combine 3 tablespoons of sugar and 2 teaspoons of cinnamon.
- Roll dough into balls and coat each one in the cinnamon-sugar mixture.
- Place on baking sheet about 2 inches apart and bake for 10–12 minutes.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
