- 1 cup bell peppers, sliced (red and yellow)
- 2 cups cabbage, shredded (green or Napa)
- 1 cup roasted unsalted cashews
- ¼ cup low-sodium soy sauce
- 2 tbsp honey or maple syrup
- 1 tbsp ginger paste
- 1 tbsp cornstarch mixed with 2 tbsp water
Instructions
- Prepare your ingredients by chopping chicken into bite-sized pieces and slicing vegetables.
- In a bowl, marinate chicken with soy sauce, ginger paste, and honey/maple syrup for at least 15 minutes.
- Heat oil in a large skillet over medium-high heat.
- Sauté marinated chicken until golden brown (5-7 minutes).
- Add bell peppers and cabbage; stir-fry until slightly softened (3-4 minutes).
- Mix in cashews and combine well.
- Pour in cornstarch mixture to thicken the sauce while stirring constantly for about a minute.
- Serve hot over rice or noodles.
