- 4 boneless chicken thighs
- 1 cup full-fat coconut milk
- 1 tbsp fresh ginger, grated
- 4 garlic cloves, minced
- 1 medium onion, finely chopped
- 2 tsp curry powder
- 2 tbsp lime juice
- to taste Salt and pepper
- Fresh cilantro leaves for garnish
Instructions
- Prepare your ingredients by chopping onions and mincing garlic.
- In a large pan over medium heat, sauté the onions in oil until translucent. Add garlic and ginger; cook until fragrant.
- Add chicken thighs to the pan, searing them on both sides until golden brown.
- Pour in the coconut milk, curry powder, lime juice, salt, and pepper. Stir well and simmer for about 20 minutes until chicken is cooked through.
- Before serving, garnish with fresh cilantro.

- This dish pairs well with rice or naan.
- Adjust the spice level by adding more or less curry powder.
