Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 tbsp baking powder
  • ½ cup unsalted butter (room temperature)
  • 4 large eggs (room temperature)
  • 2 tsp pure vanilla extract
  • 1 cup heavy cream
  • ½ cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a mixing bowl, cream together the butter and granulated sugar until light and fluffy. Add eggs one by one along with vanilla extract; mix well.
  3. Sift together flour and baking powder in another bowl. Gradually add to the wet mixture until just combined.
  4. Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick comes out clean.
  5. Allow cakes to cool completely before removing from pans.
  6. Whip heavy cream with powdered sugar until soft peaks form.
  7. Assemble the cake by placing one layer on a platter, spreading half of the whipped cream, topping with the second layer, and covering with remaining cream.
