Description

A delicious fruit jam cake that combines all-purpose flour, granulated sugar, and your choice of fruit jam.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter (softened)
  • 3 large eggs
  • 1 cup buttermilk
  • 1 cup fruit jam (strawberry, raspberry, or peach)
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease two round cake pans.
  2. Cream together butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk flour, baking powder, and salt.
  5. Gradually add dry ingredients to the butter mixture alternately with buttermilk.
  6. Gently fold in the fruit jam until evenly distributed.
  7. Pour batter evenly into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  8. Cool on wire racks before assembling layers with additional jam if desired.
