Description

Deliciously rich cookies with a delightful surprise of Nutella in the center.


Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup unsalted butter (room temperature)
  • 3/4 cup granulated sugar
  • 1/2 cup Nutella
  • 1 cup powdered sugar (for dusting)
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 1/2 cup ground hazelnuts

Instructions

  1. In a bowl, beat butter and granulated sugar until light and fluffy (3-5 minutes).
  2. Add egg yolk and vanilla; mix until combined.
  3. Gradually sift in flour and ground hazelnuts on low speed until just mixed.
  4. Form dough into two disks, wrap in plastic, and chill for at least one hour.
  5. Preheat oven to 350°F (175°C).
  6. Roll out one disk to about 1/4 inch thick.
  7. Cut shapes with cookie cutters, ensuring to cut out centers for the peek-a-boo effect.
  8. Place on parchment-lined baking sheets and bake for 10-12 minutes or until lightly golden.
  9. Once cooled, spread Nutella on one cookie half and top with another.
  10. Dust with powdered sugar before serving.

  • Chilling the dough helps to maintain its shape while baking.
