Ingredients

- 2 cups all-purpose flour
- 1 cup unsalted butter (room temperature)
- 3/4 cup granulated sugar
- 1/2 cup Nutella
- 1 cup powdered sugar (for dusting)
- 1 egg yolk
- 1 tsp vanilla extract
- 1/2 cup ground hazelnuts
Instructions
- In a bowl, beat butter and granulated sugar until light and fluffy (3-5 minutes).
- Add egg yolk and vanilla; mix until combined.
- Gradually sift in flour and ground hazelnuts on low speed until just mixed.
- Form dough into two disks, wrap in plastic, and chill for at least one hour.
- Preheat oven to 350°F (175°C).
- Roll out one disk to about 1/4 inch thick.
- Cut shapes with cookie cutters, ensuring to cut out centers for the peek-a-boo effect.
- Place on parchment-lined baking sheets and bake for 10-12 minutes or until lightly golden.
- Once cooled, spread Nutella on one cookie half and top with another.
- Dust with powdered sugar before serving.
Notes
- For best results, make sure the butter is at room temperature.
- Chilling the dough helps to maintain its shape while baking.
