- 2 cups blanched almond flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/3 cup melted coconut oil or unsalted butter
- 1/3 cup maple syrup or honey
- 1 egg (or flax egg for vegan version)
- 1 teaspoon vanilla extract
- 1/2 cup dark chocolate chips
Instructions
- Set your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the almond flour, baking soda, and salt. Use a whisk or fork to break up any lumps and evenly distribute the leavening.
- Add the melted coconut oil or butter to the dry mix, followed by the maple syrup (or honey), egg, and vanilla extract. Stir everything together until a soft, cohesive dough forms.
- Toss in your chocolate chips or chunks and stir to combine. If the dough is still very soft, you can chill it for 10–15 minutes before scooping.
- Using a tablespoon or a cookie scoop, scoop out dough balls and place them on your prepared baking sheet.
- Roll them gently between your hands if needed and flatten each ball slightly with your palm.
- Slide your tray into the preheated oven and bake for 10–12 minutes.
- Remove the cookies from the oven and let them sit on the baking sheet for 5 minutes.
Notes
- For a vegan version, substitute the egg with a flax egg.
- Chilling the dough can help improve the texture of the cookies.
