Ingredients

  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 cup bell peppers (red or yellow), chopped
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 4 cups low-sodium vegetable broth
  • Juice of 1 lime
  • 1 avocado, diced (for garnish)
  • Fresh cilantro (for garnish)

Instructions

  1. In a pot, heat olive oil over medium heat. Sauté onions and bell peppers until softened (5-7 minutes).
  2. Add minced garlic, cumin, and chili powder; cook until fragrant (about 1 minute).
  3. Stir in black beans and vegetable broth. Bring to a gentle boil.
  4. Reduce heat to low and simmer uncovered for 20-25 minutes.
  5. Remove from heat; stir in lime juice and adjust seasoning as desired.
