- 2 cups cooked shredded chicken
- 2 tablespoons butter
- 1 cup chopped carrots

- 1/4 cup all-purpose flour
- 6 cups chicken broth

- 1/2 teaspoon black pepper
- 1 tablespoon chopped parsley (optional)
- 1 cup all-purpose flour (for dumplings)
- 2 teaspoons baking powder
- 1/2 teaspoon salt (for dumplings)
- 1/2 cup milk
Instructions
- In a large pot, melt the butter over medium heat. Add chopped onion, carrots, and celery. Cook for about 5 minutes until softened. Stir in garlic and cook for another minute.
- Sprinkle flour over the vegetables and stir well to coat. Gradually pour in chicken broth while stirring to avoid lumps. Let simmer and thicken.
- Add shredded chicken to the pot. Season with salt and pepper. Let simmer gently while you prepare the dumpling dough.
- In a medium bowl, mix flour, baking powder, salt, and milk until just combined. Dough will be thick and sticky.
- Drop heaping tablespoons of dumpling dough into the simmering pot. Cover with a lid and let steam for 15 minutes without lifting the lid.
- Once dumplings are puffed and cooked through, check seasoning and add parsley if desired. Serve hot.
