Delicious garlic chicken wrapped in fresh lettuce leaves for a healthy meal.
Ingredients

- 1 lb boneless, skinless chicken breasts
- 3 cloves fresh garlic, minced
- 4 green onions, chopped
- 1 cup bell peppers, diced (any color)
- 8 large butter or iceberg lettuce leaves
- 3 tbsp low-sodium soy sauce
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tsp Sriracha (optional)
Instructions
- Dice the chicken into small pieces and mince the garlic.
- Heat oil in a skillet over medium heat, add chicken, and cook until golden brown (7-10 minutes).
- Stir in minced garlic and chopped green onions; cook for 2 minutes.
- Add diced bell peppers and sauté for another 3-4 minutes.
- Whisk together soy sauce, sesame oil, rice vinegar, and optional Sriracha; pour over chicken mixture and heat through for 2 minutes.
- Fill each lettuce leaf with the chicken mixture; top as desired and serve warm.
