- 12–16 frozen chicken or vegetable potstickers
- 2 green onions, sliced
- 1 tablespoon fresh lime juice
Instructions
- Build the aromatic base: in a large pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger. Stir gently for about a minute until fragrant. This step is simple, but it’s where the magic begins. The aroma alone will tell you you’re on the right track.
- Create the flavorful broth: in the chicken broth, stir in the soy sauce, fish sauce, and red curry paste. Let everything come to a gentle simmer. The broth should smell savory and slightly spicy, with warm undertones of ginger.
- Add vegetables: in add the sliced mushrooms and shredded carrots. Let them cook for about 3–4 minutes until just tender. The colors start to brighten the pot at this stage, making the soup feel lively and fresh.
- Cook the potstickers: add the frozen potstickers directly into the simmering broth. There’s no need to thaw them. Allow them to cook according to package directions, usually about 4–6 minutes. They will plump up and float slightly when ready.
- Finish with greens and brightness: add the baby spinach and let it wilt gently in the hot broth. Stir in fresh lime juice for that essential pop of brightness that defines Thai-inspired cooking.
- Garnish and serve: ladle the Thai Potsticker Soup into bowls and sprinkle with sliced green onions. Serve immediately while steaming hot.
